Makes 6 portions
100g red lentils
½ onion, finely chopped
1 tbsp oil
1 clove garlic, crushed
¼ tsp turmeric
¼ tsp ground cumin
1tsp grated ginger (optional)
2 of any Vegetable Peasy Pods cubes per portion
Heat the oil in a pan and fry the onions over a medium heat until they are soft. Add the garlic, ginger and the dry spices and cook for a minute, stirring all the time. Then add the lentils and water.
Give everything a good stir, cover the pan partially and simmer gently for about 20mins. The lentils should be soft enough to mash when pushed against the side of the pan with a spoon.
The dhal can be frozen at this point in portions and defrosted as necessary. Stir in two cubes of the prepared vegetable puree cubes just before serving.
